I wish they would have shown it from the start. I'm guessing that they project the image on the wall and trace in the major lines - or is there a better/different process for scaling to this size?

they probably used a grid. ive seen this done on the building-sized painted advertisements in downtown LA by the Staples center.

Yeah thats the easiest wy to resize an image by hand.
